Ginger Biscuits

6oz self raising flour
3oz Demerara sugar
4oz butter or margarine
1 tbsp golden syrup
1 tsp ginger
½ tsp bicarbonate of soda
pinch of salt

Melt butter and syrup in pan. Pour into dry ingredients. Mix well and roll into little balls. Put on greased baking tray. Bake in moderate oven 350ยบ F / Gas 4

Josh’s variations: substitute honey for golden syrup / add other spices, eg. allspice or cinnamon / add pieces of crystallised ginger
